どう説明していいのかわからないが、とにかくあっさり美味な「おいしいラーメン」
The Oishii Ramen and its inexplicable, light-flavored allure.

 僕は根っからのラーメン好きだ。ハワイの外へ旅行をする際には、日本以外の国でも相当な時間を費やしてうまい麺類を探し回る。ただ、麺なら何でもいいというわけではなく、それはラーメンでなくてはならない。フォーは僕にはちょっとあっさりし過ぎるし、逆にラクサは何度か続けて食べると、その濃厚さとスパイスに飽きが来てしまう。

 その点ラーメンはいろいろなスープベースがあって多彩だ。近頃では、塩、しょうゆ、みそ、豚骨の域を超え、鶏がら・豚骨だけでなく、ときには牛肉、ハマグリ、トリュフなどアンオーソドックスな材料を取り入れ、さらにはごまだれなどのタレ類や、ゆずの搾り汁をアクセントに添えた、創意工夫に富んだラーメンを作り出す料理人も出ている。それは、型破りなアプローチを求めてやまない僕の興味と食欲をそそる。

 そんなわけで、いわゆる“ニューエイジ”なクリエーションを数々試してみたが、おおかた失望に終わってきた。

 その末にたどり着いた、僕が単に大好きだと呼べるラーメン屋が『神座ラーメン』だ。急成長を続けるこの大阪発祥のチェーンは、フレンチコンソメ風のスープをベースにしたラーメンを考案し、既成概念を覆す新たなジャンルを確立したことで知られる。創業者の布施正人氏は、元々フレンチレストランのオーナーシェフだったそうだから、なるほどと納得できる。

 バランスの取れた繊細な味わいの神座ラーメンは、布施氏のフレンチシェフとしての経験と技の賜物だ。煮込んだ野菜の甘みと凝縮された鶏だしのうまみが溶け合ったあっさりしょうゆ味のスープに、たっぷりの白菜が上品なバランスを醸し出す。ハワイ上陸で100店舗達成という業績は、確かにうなずける結果だ。

 ハワイ店では(近日ワイキキに2号店もオープン予定)、看板の「おいしいらーめん」に、ユニークなひねりを加えた限定メニューも提供している。

 例えば、「チーズトマトラーメン」は、その名の通りトマトとチーズを使ってイタリア風にアレンジしたものだ。マリナーラパスタのスープ麺と呼べそうなこれは、僕の友だちの間では、特に女性に人気がある。これに『ザ・ライス・ファクトリー』で精米された「ななつぼし」のご飯を付けた『“リゾット”コンボ」というメニューもある。麺を食べ切った後、残ったスープにご飯を入れ、さらにほんのり香ばしいチェダーチーズソースを流し込むと、アルボリオ米を使った定番イタリアン粥風に出来上がる。

 神座ラーメンのレシピは門外不出となっている。ゼネラルマネージャー兼シェフの脇田尚仁さんは、スープはもちろんのこと、タレ、ストレート麺、餃子の具に至るまで、その素材・製法は一切明かさない。まるでスフィンクスのように秘伝レシピを守る彼のその姿勢を僕はまったく理解できる。そうだからこそ神座ラーメンはユニークであり続けるのであり、そのやり方の違いこそが僕をこの店に繰り返し通わせる理由だ。

餃子($9.99)

風味あふれるポーク餃子。しっかり味なのでそのままで十分においしい。しょうゆダレにつけると、また違った味わいが楽しめる。

おいしいラーメン($13.99)

デリケートなコンソメ風スープの香りと歯応えのある麺、そしてたっぷりの白菜が醸し出すバランスが絶妙。

チーズトマトラーメンリゾットコンボ($22.99)

トマトベースのスープとチーズを取り入れた、最後にお粥としても楽しめるユニークなラーメン。イタリア・日本のそれぞれが誇るスープのいいとこ取りをしたメニュー。

Kamukura Ramen  

  I love noodles so much that I actually seek out a bowl of soup noodles when traveling outside of Hawaii and Japan over an extended period of time.  And I don’t seek just any bowl of noodles, it has to be ramen. My thought is that ramen comes with a variety of soup bases, and some creative culinarians have expanded beyond salt, soy, miso, and tonkotsu extending to incorporate ingredients besides just pork or chicken, but occasionally beef, hamaguri, truffle, and more.  And that is even before adding the tare (sauce), or other accents such as sesame paste or a splash of yuzu juice, making it curiously craveworthy for me.

  I love exploring unorthodox approaches, and found the one I simply adored. Kamukura Ramen from Osaka strives to establish a new genre of ramen, incorporating a soup base that is akin to a French consommé.  That is because founder Masato Fuse once owned a French restaurant. His experience and skills elevate the noodle soup experience to one showcasing an aromatic expression with finely balanced flavors.  The delicate broth balanced by bold shoyu notes culls its natural sweetness from vegetables and a boiled down chicken soup.  Cabbage is loaded into each bowl, striking a graceful equilibrium with the sodium content.

  Using the Oishi Ramen base, the Tomato Cheese Ramen is limited to just Hawaii. It adopts a more Italian twist with the infusion of tomatoes and cheese which is a reminiscent of a soupy version of a pasta marinara. A “risotto” combo comes with Nanatsuboshi rice to be folded into the remaining soup after all the ramen has been consumed.  A cheese sauce made with slightly torched cheddar is poured into the mixture, generating a porridge that resembles the popular Italian dish of arborio rice.    

  General Manager and chef Naohita Wakita enshrouds the place with mystery, hesitating to reveal any of the proprietary ingredients or techniques to make the broth, tare (sauce), straight noodles, gyoza filling or just about any culinary aspect of the ramen.  I totally understand his Sphinxian demeanor to protect the secrets that make Kamukura Ramen so unique, and that difference in style is what keeps me coming back over and over again.

Recommeded dishes:

1) Gyoza ($9.99) – the flavorful pork-filled dumplings are perfect as is, but also create a different expression of flavors when dunked into the soy-based dipping sauce.

2) Oishii Ramen ($13.99) – The scent of the delicate consommé-like broth, the bouncy composure of the noodle, and the plethora of cabbage creates a balance that establishes an allure that draws me in.

3) Cheese Tomato Ramen & Risotto Combo ($22.99) – Tomato broth with cheese define this unique ramen, but turn it into something that borrows from the best of both worlds—Italy and Japan.
